Sausage and veggies has come to be my favorite meal. Whenever I am in a rut and don’t know what to prep for my school lunch the next day, this meal is my go to! Easy and versatile, you can switch it up with different veggies so you don’t get bored.  I usually cook my sausage with sweet potatoes, bell peppers, and onions, but don’t be afraid to be creative and add other veggies! A few times I have added squash to the recipe. With the right seasonings, you get an amazing and flavorful meal!

Recipe:

1 ½ pounds sausage links

4 potatoes –  sweet or regular

1 bell pepper, any color

½ an onion

½ tsp of salt

1 tsp garlic powder

1 tsp onion powder

¼ tsp crushed red pepper ( optional for an extra kick!)

1 tsp paprika

1 tsp dried  parsley

            Preheat the oven to 425 degrees Farenheit. Chop up your sausage links (normally the sausage links have mild flavoring and do not need seasoning.). Place the sausage on a parchment lined cookie sheet. Chop up your veggies and toss them in the oil either in a bowl or in a gallon Ziplock bag. Add salt, garlic powder, onion powder, crushed red pepper, paprika, and dried parsley. Toss till the veggies are evenly coated. Pour onto another parchment lined cookie sheet.  Bake for approximately 30-45 minutes.
